Dehesa de Los Llanos has a herd of 6.000 heads of ancestral Manchega sheep, famous since immemorial times for the quality of their milk and the meat of their lambs. This livestock farming is the only necessary basic element for the elaboration of Dehesa de Los Llanos Cheese, an artisan Manchego Cheese made with raw milk, a natural rind and with Designation of Origin.
Dehesa de Los Llanos was the first sheep farm in Spain to introduce electronic tagging of sheep and lambs, meaning that it is possible to keep a record of each head including their diet and health, essential requirements to improve the herd and ensure a traceability that allows us to establish continuous improvement measures.
At Dehesa de los Llanos the most important ingredients for the diet of sheep are cultivated, such as Alfalfa, Maize and other cereals. Dehesa de los Llanos is fully conscious that a proper diet and good genetics are fundamental to produce quality milk and meat.
